World Champion Anderson was defeated 6-4 by Jenkins as the nine-time major finalist continued his bid for a first European Tour title.
Jenkins now plays Mervyn King after the Norfolk thrower - a regular in the latter stages of European Tour events - saw off Justin Pipe 6-1.
Reigning champion James Wade defeated Holland's Vincent van der Voort 6-2 and now faces a quarter-final with Kim Huybrechts, who defied a 160 finish from Wayne Jones in a 6-4 third round victory.
